When people talk about salt,
they are referring to the compound sodium chloride.
Sodium and chloride are essential minerals the body
needs.
However, sodium garners the most attention due to
its association with health problems when consumed
in excess. For this reason, the terms ‘salt’ and ‘sodium’
are often used interchangeably.
Salt is pervasive in our food supply. It occurs naturally
in some foods, but most salt is added by food
manufacturers—this is often referred to as ‘hidden’
salt. Additionally, salt may be added during cooking or
at the dining table.
