DECADENT VEGAN
Choc-Cherry Mousse
This ‘naughty but nice’ dessert is both
vegan and nutri琀椀ous!
1. Melt 100g dairy-free dark chocolate
(minimum 70% cocoa) in 30-second
intervals in the microwave, s琀椀rring
each 琀椀me un琀椀l melted, then let cool.
2. Blend one pack of chilled silken
tofu (300–350g) with ½ cup frozen
cherries and 1–2 tablespoons of your
chosen sweetener (e.g., maple syrup,
monk fruit).
3. Add the melted chocolate to the
tofu mix and blend un琀椀l smooth.
Serve with fresh berries or cherries.
STRAWBERRY, APPLE & MINT
Mocktail
We all know indulging in too much
dessert can a昀昀ect our waistline, but
have you considered the e昀昀ects of
excess alcohol? Balance it out with
this light mocktail:
1. Purée two punnets of
strawberries (250g each) in
a blender un琀椀l smooth.
2. Combine with 500ml
unsweetened apple juice
or coconut water. Strain to
remove pulp, then refrigerate.
3. Add 1L of sparkling water
and fresh mint leaves
before serving, and
昀椀nish with a squeeze
of lime.
